Pumpkin Squares and Bars (2 recipes)

If you're looking
for some new recipes for the holidays, here are two delicious pumpkin recipes
for you to try. The second recipe also includes directions for making a
delicious cream-cheese frosting.

This recipe comes from a collection of Amish/Mennonite recipes given to me as
a shower gift. The recipe listed only ingredients and no instructions except to
bake at 350.
Pumpkin Squares
4 eggs
2 cups sugar
1 cup oil
1 tsp. vanilla
2 cups pumpkin
2 cups flour
1 tsp. soda
2 tsp. baking powder
1/2 tsp. salt
2 tsp. cinnamon
1 cup chopped nuts (optional)
Mix eggs, sugar, vanilla and oil. Add pumpkin and mix well. Combine the dry
ingredients and add to the egg mixture. Add nuts if desired. Bake on a long
greased cookie sheet at 350 degrees for about 25 minutes or until done.
Delicious Pumpkin Bars
These bars are delicious by themselves or even better, topped with the heavenly
cream cheese frosting included in this recipe.
BARS:
2 c. all-purpose flour
2 c. sugar
2 tsp. baking powder
1 tsp. each, baking soda, cinnamon and nutmeg
1/2 tsp. each, salt and cloves
1 c. oil
2 c. pumpkin
4 eggs
1/2 c. raisins
FROSTING:
2 c. powdered sugar
1/3 c. butter, softened
1 3-ounce pkg. cream cheese, softened
1 T. milk
1 tsp. vanilla
DIRECTIONS:
Heat oven to 350 degrees, grease 9x13 baking pan. To make the bars, combine all
ingredients except raisins and beat on low until moistened. Beat 2 minutes at
medium speed and stir in raisins. Pour into greased pan and bake for 45-50
minutes, until toothpick inserted into center comes out clean. Let cool
completely.
For frosting, combine all ingredients and beat until smooth. Frost and cut into
bars. Store in refrigerator.
Here is another cream cheese frosting recipe:
3 oz. cream cheese (softened)
6 T. margarine (softened)
1-3/4 cups powdered sugar
1 tsp. vanilla extract
1 tsp. milk, if needed
Combine cream cheese and margarine, mixing well. Add powdered sugar and vanilla
and beat until smooth. After pumpkin squares have cooled slightly, spread with
frosting.
You can also add chopped nuts on top.
Makes 48 bars.
