Valentine Butter Cookies & Heart Shaped Cookies

If you love butter cookies and are looking for some great recipes that make large batches of cookies, try one of these two recipes. The Valentine Butter Cookies (made with a cookie press) and the Heart Shaped Cookies (cut out cookies) will give you many dozens of cookies to eat, share with others, or store for when you crave a yummy treat.Valentine Butter Cookies
2 cups butter (no substitutes), softened
2 cups sugar
3 eggs
1 T. vanilla extract
6 cups flour
2 tsp. baking powder
Optional: red tinted sugar or sprinkles.
Preheat your oven to 350.
Cream together the butter and sugar in a mixing bowl. Then add the eggs and vanilla, mixing well. Combine the flour and baking powder and gradually add this to the egg mixture; mix well. Use a heart-shape cookie press to shape these cookies. Place them on an ungreased cookie sheet. If desired, you may decorate these with the sugar or sprinkles. Bake for 10-12 minutes or until the edges are light brown.
This recipes yields about 18-19 dozen 1-inch cookies.
Be creative: Use different cookie press molds for a variety of cookie shapes.
I received this recipe from a coworker and friend during my graduate school days. Sue had made these cookies and shared them with us. Naturally, we women requested the recipe.
This is a great cut-out recipe if you want to make a large batch of cookies. You will find two different measurements listed. Both of them will give you many dozens of cookies, but if you want to make a very large of batch of cookies, follow the second set. You can easily adapt it for any occasion simply by using different cookie cutters. You can also add a couple drops of food coloring to tint the dough.
Heart Shaped Cookies
3 cups sugar
2 lbs. butter
6 eggs
6 tsp. baking powder
8 cups flour
1 1/2 tsp. vanilla
4 1/2 cups sugar
3 lbs. butter
9 eggs
9 tsp. baking powder
12 cups flour
2 tsp. vanilla
Directions:
Cream the sugar, butter, eggs, and vanilla until creamy. Mix together the flour and baking powder. Add the flour mixture a little at a time. Mix into a dough ball. Dough will roll out better when it is refrigerated for a few hours.
Preheat oven to 350. Roll out portions of the dough on a floured surface to about an 1/8-inch thickness. Cut into heart shapes (or whatever other shapes you may desire). Bake on an ungreased cookie sheet for about 10-15 minutes or until done.
You can decorate these cookies with candy sprinkles, tinted sugar, crushed candy canes or whatever else you desire. My friend put glaze icing on top of hers. To make glaze icing, mix together a box of confectioner's sugar, 1 tsp. vanilla, and enough lemon juice to make the glaze a smooth consistency.
