Simply Oatmeal Cookies

A reader asked for a simple oatmeal cookie recipe--and not oatmeal raisin. If you like oatmeal, you will enjoy these simple refrigerator oatmeal cookies.

Ingredients you will need to make these cookies:

1 cup shortening

1 cup brown sugar

1 cup sugar

2 eggs, beaten

1 tsp. vanilla

1 1/2 cup flour

1 tsp. baking soda

1 tsp. salt

3 cups oatmeal

1/2 cup nuts (optional)

Directions to make these simple cookies:

Cream shortening and sugars. Add eggs and vanilla. Sift flour, baking soda, and salt and add to the egg mixture. Stir in oatmeal and nuts. Fix in rolls to chill. Slice and bake at 375 for about 10 to 15 minutes or until lightly browned.
