PBJ Thumbprints

These cookies mix the two favorite flavors of most children...peanut butter and jelly.

1/2 cup softened butter

1/2 cup creamy peanut butter

1/2 cup dark brown sugar

1 egg

1 teaspoon vanilla

1 1/2 cups flour

pinch salt

1/2 cup finely chopped peanuts

1/3 cup favorite jam or jelly

 

Preheat the oven to 350 degrees. Cream the butter and peanut butter together until smooth and creamy. Add the brown sugar and beat until smooth. Beat in the egg and vanilla and mix until light and fluffy. Sift the flour and salt into the peanut butter mixture, mixing constantly until well blended.

Roll the dough into one inch balls, and then roll each ball into the chopped peanuts. Place each peanut covered ball on an ungreased cookie sheet and repeat with the remaining dough. Press your thumb into the center of the dough to make a small indent.

Bake for about 10-12 minutes, or until set and pale golden brown on the edges. Cool on the sheets for about five minutes, then transfer to wire racks to finish cooling. Fill each cookie with about 1/4 teaspoon of jam or jelly.

Makes about 30 cookies.
