Zucchini
Chocolate Chip Cookies

This is a delicious
way to use up that extra zucchini! The chocolate chips and nuts are optional,
but I always enjoy the taste of chocolate chips. For variety, you can add
different flavored chips.
Every year, I have friends who give me extra
zucchini. I received this recipe (along with some cookies and extra zucchini)
from a friend at church several summers ago.
1 cup shortening
2 cups sugar
2 eggs
2 cup grated zucchini
2 tsp. salt
2 tsp. vanilla
4 cups flour
2 tsp. cinnamon
2 tsp. baking powder
2 tsp. baking soda
Optional:
1-2 cups chocolate chips
1 cup nuts
Preheat oven to 370.
Cream shortening and sugar. Blend eggs and enough zucchini to measure 2 1/4 cup.
Add the sugar and shortening mixture to the zucchini. Add the remaining
ingredients and mix well.
Drop by teaspoonful on cookie sheet and bake 8-10 minutes.
