Zucchini Chocolate Chip Cookies

This is a delicious way to use up that extra zucchini! The chocolate chips and nuts are optional, but I always enjoy the taste of chocolate chips. For variety, you can add different flavored chips.

Every year, I have friends who give me extra zucchini. I received this recipe (along with some cookies and extra zucchini) from a friend at church several summers ago.

1 cup shortening
2 cups sugar
2 eggs
2 cup grated zucchini
2 tsp. salt
2 tsp. vanilla
4 cups flour
2 tsp. cinnamon
2 tsp. baking powder*
2 tsp. baking soda*
Optional:
1-2 cups chocolate chips
1 cup nuts

Preheat oven to 370.

Cream shortening and sugar. Blend eggs and enough zucchini to measure 2 1/4 cup. Add the sugar and shortening mixture to the zucchini. Add the remaining ingredients and mix well.

Drop by teaspoonful on cookie sheet and bake 8-10 minutes.

(*Note: This cookie may have an aftertaste to some people due to the amount of baking powder and soda, but this is the amount Rachel's friend uses. You can reduce the amount of each by half. - Michelle)
