Zucchini Oatmeal Cookies

If you've been blessed with an abundance of zucchini try this healthy zucchini oatmeal recipe.

You will need the following ingredients:

1/2 cup shortening
3/4 cup honey
1 egg
1 cup whole wheat flour*
1 cup flour
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/4 tsp. salt
1 cup grated zucchini
1 cup oatmeal
1 cup raisins

Instructions: Preheat the oven to 375. Cream together the shortening and honey. Then add the egg and beat well. Stir together baking soda, cinnamon, nutmeg, and salt. Add this mixture alternately with the zucchini to the egg mixture. Stir in the oatmeal and raisins. Drop by teaspoons onto greased cookie sheets. Bake for 10 to 12 minutes.

Makes 5 dozen



* Depending on what taste you prefer, you can use all whole wheat or all refined flour.
